Watermelon Mocktail

Watermelon Mocktail

There's nothing like a refreshing Watermelon Mocktail with fresh mint and lime on a hot summer day! It's a 5 star resort worthy drink you can make at home that's perfect for kids and adults alike!
  • 3 cups cubed watermelon seedless
  • ¼ cup lime juice about 2 limes juiced
  • 2 cups club soda
  • 8 sprigs of mint

INSTRUCTIONS:

  • Cube watermelon. Remove any seeds.
  • Slice four thin rounds from your limes. Set aside to be used for garnish. Juice the rest of the two limes.
  •  Combine the cubed watermelon and lime juice in a blender. Blend until smooth.
  • Using a sieve, strain the watermelon and lime mixture until you're left with just the juice. Set aside.
  • Place 5 mint leaves at the bottom of each glass. Use a muddler to release the flavor of the mint.
  • Fill cups with ice. Pour watermelon juice halfway full. Top with club soda until full. Gently stir with a spoon.
  • Garnish each glass with a thin slice of watermelon, a sprig of mint, and reserved lime wedge. Enjoy!

Notes

  • Use seedless watermelon, or be sure to remove all seeds before blending.
  • Don't skip the step of straining your watermelon juice through the sieve. This will create a smooth juice without the pulp of the watermelon.
  • Reserve enough mint, lime, and watermelon that you have some leftover to garnish each drink.
